Pozole Verde. Chicken, lime crema, cotija, cilantro, pickled serrano chiles.

#recipe : Simmer tomatillos, minced garlic, and chopped green chiles (Anaheim here) in a bit of butter. You want to soften everything up. Let cool. Blend with fresh cilantro, a dollop of sour cream or crema Mexicana, and, if necessary for smoothness, some milk. The end result should be smooth and vivid green. Brown chopped chicken (breast here, but thigh is also fine) with finely chopped onion. Add the blended mixture, bay leaves, oregano, black pepper, salt, chicken stock. Simmer for at least 3 hours to get the chicken nice and tender. Add hominy at least 30 minutes before serving. Plate with garnishes.
